I'm not sure what it is about going wheat-free that prompted me to finally start a blog, but here I am. This dietary change is motivated by my continued quest for optimal health. It's been several years since I went (mostly) vegan, and I feel better now and enjoy food more than I did before going veg. I have eliminated HFCS, dyes, preservatives, white sugar, etc, but I still am bothered with persistant skin disorders. Much of my reading suggests that wheat is a common trigger for such ailments, so I decided to give it a go. (Thanks to my sister for the encouragement!)
Today was not too hard. Breakfast was an apple, just purchased yesterday from a local farmer, with homemade sunflower seed butter and steel-cut oats with a sprinkle of Himalayan pink sea salt, generous pinch of cinnamon, and a little agave.
This is much more than I usually eat on weekday mornings, so it held me over for quite awhile. I wasn't really hungry at lunch time; early in the afternoon, I did make some fresh-popped organic popcorn to share with my boys.
Dinner consisted of frozen organic lima beans, thawed and tossed with a little melted Earth Balance and no-salt seasoning, diced local red potatoes, also with EB and seasoning, and some wonderfully fresh russian kale, which was so tender, I couldn't bear to cook it so I just chopped it and served with salad dressing. (The kale and potatoes were also scored yesterday from local farmers.)
Dinner was great. Hubby liked it; our little guys ate only a few bites of the potatoes and limas but chowed down on the kale! :D And soymilk; boy, does the little guy love his milk. I did have some organic chocolate milk for my sweet tooth (a treat we don't usually have in the house), and now, as I type, I'm sipping on my chai tea.
So, day one has been a success. Hopefully I can keep it going; my guys are not going wheat-free, so it will be hard not to munch on the bits of sandwich leftover from packing my son's lunch. And give up my Ezekiel english muffins. Oh well...one day at a time.
